Ingredients

  • 1/2 cup crushed almond macaroons
  • 6 tablespoons butter, softened
  • 4 packages (8 oz.) cream cheese, softened
  • 6 squares semi-sweet chocolate, melted
  • 3 eggs
  • 2/3 cup sugar
  • 1/3 cup milk
  • 2 teaspoons instant Espresso

Instructions

  1. In a 9 x 3-inch spring-form pan, mix crushed almond macaroons and softened butter.
  2. Press the mixture on the bottom and around the side of the pan to within 1 inch of the top.
  3. Set aside.
  4. Note: You can also use 1 1/2 cups graham cracker crumbs and 2 teaspoons almond extract as a substitute for the macaroons.
