Ingredients

  • 1 lb. fresh asparagus
  • 1 tsp. minced onion
  • 1/2 tsp. curry powder
  • 1/2 cup soft bread crumbs
  • 5 Tbsp. margarine
  • 1/2 tsp. salt
  • 3 Tbsp. flour
  • 1/8 tsp. pepper
  • 1 1/2 cups milk

Instructions

  1. Place cooked and strained asparagus in a shallow baking dish.
  2. Mix 2 tablespoons of margarine with bread crumbs and set aside.
  3. In a separate bowl, blend salt, pepper, flour, curry, and remaining margarine until smooth.
  4. Gradually add milk to the mixture and cook until thickened.
  5. Stir in minced onion and pour the sauce over the asparagus.
  6. Sprinkle with the bread crumbs mixture.
  7. Bake at 425°F for 15 minutes until golden and bubbly.
