Eve'S Macaroni Salad

Ingredients

  • 8 c. macaroni, cooked and drained
  • 4 hard-boiled eggs
  • 4 slices bacon, fried crisp
  • 12 olives, diced
  • 3/4 c. dill pickle relish or salad cubes
  • 3/4 c. low-fat mayonnaise
  • 1 Tbsp. Italian herb seasoning
  • salt and pepper to taste

Instructions

  1. Dice eggs and bacon and combine with macaroni.
  2. Add other ingredients (mayonnaise last).
  3. Toss and chill.
  4. Serves 16 to 20. Keeps well in refrigerator.
