Fadge is a hearty potato bread with a crusty exterior and soft interior, flavored with herbs and served hot, perfect for breakfast or a comforting snack.

Ingredients

  • 2 lb. potatoes, peeled and cut into quarters
  • 1 egg, beaten
  • 2 to 4 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/2 Tbsp. chopped parsley, chives, and lemon thyme, mixed
  • whole milk
  • salt
  • ground pepper
  • black pepper

Instructions

  1. Boil potatoes until tender, about 15 minutes.
  2. Drain well and place potatoes in a bowl.
  3. Mash the potatoes thoroughly.
  4. Add beaten egg, butter, flour, and chopped herbs. Mix well.
  5. Add a few drops of milk if the mixture is too stiff.
  6. Shape the dough into a 1-inch thick round and slice into 8 pieces.
  7. Dip each piece in seasoned flour.
  8. Fry on a lightly greased griddle until crusty and golden on one side, about 4 to 5 minutes.
  9. Turn over and cook on the other side until golden.
  10. Serve hot, optionally topped with a pat of butter.
