Ingredients

  • skirt steak or other inexpensive cut of meat or chicken
  • 1/3 cup soy sauce
  • 3 to 4 garlic cloves, chopped
  • 1/3 cup red wine or 1/4 cup red vinegar
  • 2 lemons
  • ground pepper

Instructions

  1. Put coarse ground pepper and garlic powder on both sides of the meat and place in a long Pyrex dish.
  2. Squeeze 2 lemons over the meat. Add soy sauce, red wine or red vinegar, and chopped garlic.
  3. Cover with plastic wrap.
  4. Let stand for 2 to 4 hours.
  5. Cook on high heat on the grill, using the marinade to baste while cooking.

Tips & Substitutions

For extra flavor, marinate the meat overnight if possible. If you don't have skirt steak, flank steak or chicken thighs work well as substitutes. Consider adding a teaspoon of cumin or chili powder to the marinade for a spicy kick. Remember to pat the meat dry before grilling to get a nice sear. This recipe is also great when used in easy tacos or served with grilled vegetables.

Serving Suggestions

Serve the fajitas with warm tortillas, guacamole, and fresh salsa for a complete meal. Pair with a side of Mexican rice or a fresh salad for balance. These fajitas also make a great filling for burritos or can be enjoyed on top of a Beef Taco Salad for an added twist.

Storage & Reheating

Leftover fajitas can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm them in a skillet over medium heat, adding a splash of water to prevent drying out. You can also microwave them in short intervals, covered, to retain moisture without overcooking.

Frequently Asked Questions

Can I use a different type of meat for this recipe?

Absolutely! While skirt steak is traditional, you can substitute with flank steak, chicken, or even shrimp. Adjust the marinating time based on the meat type; chicken should marinate for at least 2 hours, while shrimp needs only 30 minutes.

What if I don't have red wine or red vinegar?

If red wine or vinegar is unavailable, you can substitute with apple cider vinegar or white wine. For a non-alcoholic option, try using additional lemon juice mixed with a little red wine vinegar for a similar tangy flavor profile.

How can I make this dish spicier?

To add heat, consider mixing in diced jalapeños or a dash of cayenne pepper to the marinade. You can also serve the fajitas with spicy salsa or hot sauce on the side. Experimenting with spices like chipotle or smoked paprika can also enhance the flavor.
