Ingredients

  • 2 lb ground beef
  • 1 large onion
  • 2 Tbsp chili powder
  • 3 tsp ground cumin
  • 1 tsp salt
  • 15 oz can Ranch Style beans
  • 8 to 10 corn tortillas
  • 1.5 cups shredded Monterey Jack cheese
  • 1.5 cups shredded Cheddar cheese
  • 1 can cream of mushroom soup
  • 10 oz can tomatoes and green chilies

Instructions

  1. Cook ground beef and chopped onion in a large skillet until the meat is browned and the onion is tender.
  2. Discard drippings from the skillet.
  3. Add chili powder, ground cumin, and salt to the beef mixture and stir well.
  4. Cook over low heat for 10 minutes.
  5. Spoon the meat mixture into a 13 x 9-inch baking dish.
  6. Layer the ranch style beans, torn corn tortillas, and shredded cheeses over the meat mixture.
  7. Spread the undiluted cream of mushroom soup on top of the layered ingredients.
  8. Pour the can of tomatoes and green chilies over the soup.
  9. Cover the baking dish and refrigerate overnight.
  10. Bake uncovered at 350°F for 1 hour before serving.
