Ingredients

  • 2 pkg. (3 oz.) black raspberry gelatin
  • 1 (1 lb. 4 1/2 oz.) can crushed pineapple in juice
  • 1 (15 oz.) can wild blueberries in heavy syrup
  • 1 cup chopped pecans
  • 1 cup whipped cream

Instructions

  1. Put the black raspberry gelatin in a bowl with 2 cups of boiling water and stir until dissolved. Let cool slightly.
  2. Add the crushed pineapple (with juice) to the gelatin mixture and allow it to partially set.
  3. Whip the mixture until smooth, then fold in the wild blueberries and chopped pecans.
  4. Gently fold in the whipped cream until well combined.
  5. Pour the mixture into a long glass dish or individual cups.
  6. Chill until set and ready to serve.
