Fancy Mashed Potatoes

Creamy, flavorful mashed potatoes with sour cream, cream cheese, scallions, and paprika, perfect as a comforting side dish for family dinners or special occasions.

Ingredients

  • 10 potatoes
  • 8 oz. sour cream
  • 8 oz. cream cheese
  • 1/2 cup butter
  • 2 teaspoons salt
  • 1/4 cup chopped scallions
  • paprika
  • garlic powder

Instructions

  1. Beat the cream cheese until smooth.
  2. Add the cream cheese to the mashed potatoes along with all other ingredients except paprika and mix well.
  3. Transfer the mixture into a lightly buttered dish.
  4. Sprinkle paprika on top of the mashed potatoes.
  5. Refrigerate overnight.
  6. Remove from refrigerator 15 minutes before baking.
  7. Uncover the dish.
  8. Bake at 350°F until the mashed potatoes are well heated through.
