Ingredients

  • 1 c. mashed potatoes
  • 2 eggs, beaten
  • 1/2 c. milk
  • 1/4 tsp. soda
  • 2 c. shredded cheese
  • 1/2 c. flour
  • salad oil

Instructions

  1. Combine mashed potatoes, beaten eggs, milk, soda, shredded cheese, and flour to form a batter.
  2. Pour salad oil into a pan to a depth of 2 inches and heat over medium heat.
  3. Drop spoonfuls of batter into the hot oil.
  4. Fry for 3 to 4 minutes until golden brown, then serve immediately.
