Favorite Caramel Corn

Ingredients

  • 32 cups plain popped popcorn
  • 1 cup dry roasted peanuts, if desired
  • 2 cups firmly packed brown sugar
  • 1 cup Land O Lakes Butter
  • 1/2 cup light corn syrup
  • 1 teaspoon salt
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda

Instructions

  1. Heat oven to 200F.
  2. Combine popcorn and peanuts, if desired, in large roasting pan; set aside.
  3. Combine brown sugar, butter, corn syrup and salt in 3-quart saucepan.
  4. Cook over medium heat, stirring occasionally, 8-10 minutes or until mixture comes to a full boil.
  5. Continue cooking, stirring occasionally, 5 minutes.
  6. Remove from heat; stir in vanilla and baking soda.
  7. Carefully pour hot syrup mixture over popcorn and peanuts in pan; stir until well coated.
  8. Bake, stirring every 15 minutes, 1 hour or until caramel corn is crisp.
  9. Immediately place caramel corn onto waxed paper.
  10. Cool completely.
  11. Break into bite-sized pieces.
  12. Store in tightly covered container.
