Ingredients

  • 3 lb. fryer chicken
  • 1 can cream of chicken soup
  • 1 c. self-rising flour
  • dash of salt
  • dash of pepper
  • 1 c. buttermilk
  • 2 c. reserved chicken broth

Instructions

  1. Cook the chicken until tender.
  2. Remove the meat from the broth, cool it, and then remove the skin and bones.
  3. Reserve the chicken broth.
  4. Cut the cooked chicken into small pieces and place them in a 9 x 13-inch pan.
  5. In a saucepan, bring the cream of chicken soup and reserved broth to a boil.
  6. Add self-rising flour, salt, and pepper to the boiling mixture, stirring until thickened.
  7. Stir in the buttermilk and melted margarine until smooth.
  8. Pour the sauce over the chicken in the pan.
  9. Bake in a preheated oven at 375°F (190°C) for about 30 minutes or until golden and bubbly.
