Ingredients

  • 1/2 c. onion, diced
  • 1/4 c. green pepper, diced
  • 1/2 c. zucchini squash
  • 2 cloves garlic
  • 1 c. fresh mushrooms
  • 2 c. raw potatoes, grated
  • 4 eggs

Instructions

  1. Mix onion, peppers, zucchini, garlic, mushrooms and potatoes in nonstick skillet.
  2. Steam vegetables in 1/4 cup water until they begin to soften.
  3. Beat eggs and pour over vegetables.
  4. Stir and cook until eggs are set.
