Ingredients

  • 1 can sliced fruit (1 lb. 13 oz.)
  • 1 tsp. cinnamon
  • 1 Tbsp. lemon juice
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3 Tbsp. butter or margarine
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/3 cup sugar

Instructions

  1. Grease an 8-inch square baking dish. Drain the canned fruit and arrange it in the bottom of the dish.
  2. Sprinkle the fruit with cinnamon and lemon juice.
  3. Sift together the flour, baking powder, and salt.
  4. Cream the butter with 3/4 cup sugar until fluffy.
  5. Beat until smooth and well combined.
  6. Add the dry ingredients alternately with the milk, mixing gently after each addition.
  7. Spread the batter evenly over the fruit in the dish.
  8. Combine the remaining 1/3 cup sugar with cornstarch and sprinkle over the batter.
  9. Gently pour 1 cup boiling water over the entire mixture.
  10. Bake at 350°F (175°C) for 1 to 1 1/4 hours until golden and bubbly.
