Ingredients

  • 4 cups lukewarm water
  • 1 yeast cake
  • 1/4 cup sugar
  • 4 teaspoons salt
  • 1/4 cup oil
  • 1/4 cup cracked wheat
  • 3 cups whole wheat flour
  • 5 cups sifted white flour

Instructions

  1. Dissolve yeast in lukewarm water with sugar and set aside for 20 minutes.
  2. In a large bowl, combine the yeast mixture, salt, and oil.
  3. Stir in cracked wheat and flours.
  4. Mix well.
  5. On a floured board, knead the dough for 10 to 15 minutes.
  6. Let rise in a large oiled pan or bowl for approximately 2 hours.
  7. Punch down the dough, turn it over, and let rise again for 1 hour.
  8. Divide the dough into 4 equal parts.
  9. Knead each part vigorously and shape into loaves.
  10. Place the loaves into 4 greased bread loaf pans.
  11. Allow the loaves to rise for 30 minutes before baking.
