Ingredients

  • 2 1/2 teaspoons active dry yeast
  • 4 cups warm water
  • 2 cups nonfat dry milk
  • 1 cup oil
  • 1 cup sugar
  • 3 teaspoons salt
  • 10 to 13 cups flour

Instructions

  1. In a large mixing bowl, dissolve the yeast in warm water and let it sit until frothy, about 5 minutes.
  2. Add dry milk, oil, sugar or honey, and salt to the yeast mixture and stir well.
  3. Gradually add the flour, 1 cup at a time, mixing until a soft dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  6. Punch down the dough and divide it into two equal portions.
  7. Shape each portion into a loaf and place in greased bread pans.
  8. Cover the pans and let the dough rise again until nearly doubled, about 30-45 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Bake the bread for 25-30 minutes until golden brown and sounds hollow when tapped.
  11. Remove from the oven, cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
