Ingredients

  • 1 medium orange, cut into chunks (unpeeled)
  • 1 cup plus 2 tablespoons water
  • 2 eggs
  • 1 package yellow cake mix
  • 1 1/2 cups sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 cup butter or margarine
  • 1 (3 1/2 oz) can flaked coconut
  • 1 package fluffy white frosting mix
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 2/3 cup butter, softened
  • 1 cup granulated sugar
  • 1 c. granulated sugar

Instructions

  1. Preheat your oven and prepare the cake pan according to the recipe instructions.
  2. In a blender or food processor, combine the orange chunks with water until smooth.
  3. In a large mixing bowl, combine the yellow cake mix, orange mixture, eggs, sugar, flour, cinnamon, baking powder, and salt. Mix until well blended.
  4. Pour the batter into the prepared cake pan and bake until a toothpick inserted in the center comes out clean.
  5. While the cake is baking, prepare the coconut topping by mixing the flaked coconut with softened butter, sugar, cornstarch, and a pinch of salt. Cook over medium heat until thickened.
  6. Allow the cake to cool, then spread the coconut topping evenly over the surface.
  7. Prepare the frosting mix according to package instructions and frost the cooled cake.
  8. Decorate as desired and serve.
