Ingredients

  • 1/2 cup corn meal
  • 1 1/2 cups flour
  • 4 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 1/2 cups milk

Instructions

  1. Mix dry ingredients together with a fork.
  2. In a separate bowl, beat egg with a fork, then blend in vegetable oil.
  3. Add milk to the egg mixture and mix well.
  4. Pour the egg mixture into the flour mixture and stir until just combined, beating out any large lumps.
  5. Pour 1/4 cup of batter onto a lightly greased hot griddle or frying pan.
  6. Cook until bubbles form on top and edges are dry, then turn and cook the other side until golden brown.
