Ingredients

  • 6 graham crackers
  • 1 1/2 Tbsp. diet margarine
  • 1 Tbsp. granulated gelatin
  • 1/2 c. cold water
  • 1/3 c. boiling water
  • 1/2 tsp. grated lemon rind
  • 1/2 c. lemon juice
  • 6 packets Equal
  • 2 Tbsp. water
  • 2 c. low-fat cottage cheese
  • 1/2 tsp. lemon extract
  • 4 large strawberries

Instructions

  1. Prepare an 8 x 8 x 2-inch pan with non-stick spray or Pam.
  2. Make fine crumbs with graham crackers and mix with melted margarine.
  3. Soak gelatin in cold water.
  4. Combine boiling water, lemon rind, lemon juice and sugar, stirring until dissolved.
  5. Chill until it reaches the consistency of unbeaten egg whites.
  6. Put 2 tablespoons water, cottage cheese, and lemon extract into a blender.
  7. Cover and blend on high speed for 10 to 15 seconds.
  8. Add gelatin mixture and blend on high speed for 15 seconds.
  9. Pour mixture into prepared pan.
  10. Sprinkle graham cracker crumbs over the top.
  11. Slice strawberries and arrange on top of the cheesecake.
  12. Chill until set. Serve and enjoy.
