Festive Cauliflower

Ingredients

  • 4 c. cauliflower
  • 1 can cream of chicken soup
  • 1/2 c. milk
  • 1/2 c. shredded Cheddar cheese
  • 1/8 tsp. curry powder (optional)
  • dash of pepper
  • 1 c. frozen peas, thawed
  • 1/2 c. diced sweet red pepper
  • toasted almond slices

Instructions

  1. In covered skillet, in 1/2 inch boiling water, cook cauliflower 5 minutes or until tender-crisp.
  2. Drain.
  3. Stir in soup, milk, curry and pepper until smooth.
  4. Add peas and red pepper.
  5. Cook 5 minutes or until vegetables are tender, stirring often.
  6. Add cheese last 30 seconds of cooking.
  7. Top with almonds. Makes 5 cups.
