Feta Pine Nut Dip

Ingredients

  • 1/2 cup pine nuts
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons dried basil
  • 1/4 teaspoon dried mint
  • 6 ounces feta cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 cup plain yogurt

Instructions

  1. Preheat oven to 350°F
  2. Toast pine nuts in a shallow baking pan, stirring occasionally until golden brown, about 7 minutes.
  3. Cool and chop finely.
  4. Combine nuts, red pepper, parsley, basil, and mint in a medium bowl.
  5. Crumble feta in small pieces; add to nuts.
  6. Whisk garlic, salt, pepper, and yogurt in a small bowl until well blended.
  7. Stir into the nut and feta mixture.
  8. Cover and chill for one hour.
  9. Serve with crackers.
