Fiery Chicken Tacos

Ingredients

  • 1 tbsp olive oil
  • 350 g leftover chicken, shredded
  • 1-2 tbsp sambal oelek
  • 2 tbsp lime juice
  • 8 None taco shells
  • 150 g cheddar cheese, grated
  • 1 None ripe avocado, peeled, stoned and flesh chopped
  • 1 None romaine lettuce, shredded
  • 1 None red pepper, deseeded and chopped
  • None None soured cream, to serve

Instructions

  1. Preheat oven to 400°F. Grease a baking dish. Heat oil in a large frying pan, add shredded chicken and saute, stirring, for 10 mins until chicken is hot. Add sambal oelek to taste and 1 tbsp lime juice. Fill taco shells with mixture and place in prepared pan. Sprinkle with cheese and bake for 5-10 mins.
  2. Meanwhile, place avocado in a bowl with lettuce, pepper and remaining lime juice and toss. Sprinkle over the taco shells and serve with sour cream.
