Fiesta Beef

Ingredients

  • 1 lb. lean ground beef
  • 1/2 c. diced onion
  • 4 fresh canned whole chilies
  • 1 (16 oz.) can whole tomatoes in juice
  • 1/2 tsp. salt
  • 3/4 c. water
  • 1 1/2 c. Minute rice
  • 2 oz. Cheddar cheese, shredded
  • 2 tsp. chopped fresh parsley
  • 1 Tbsp. oil
  • 1 clove, finely minced
  • 2 tsp. chili powder

Instructions

  1. Saute beef, onion, chilies and garlic in oil in a skillet until beef is browned.
  2. Add chili powder, tomatoes, salt and water.
  3. Break up tomatoes.
  4. Bring to boil and stir rice.
  5. Cover and remove from heat.
  6. Let stand 5 minutes.
  7. Top with cheese and parsley.
