Ingredients

  • 2 cups dried canned beets
  • 1 package lemon gelatin
  • 1 cup hot water
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon minced onion
  • 1/4 teaspoon salt
  • 3/4 cup beet liquid

Instructions

  1. Add 1 cup hot water to the lemon gelatin in a mixing bowl and stir until dissolved.
  2. Add the dried canned beets, sugar, lemon juice, minced onion, salt, and beet liquid to the gelatin mixture and stir together.
  3. Pour the mixture into a square pan or mold and chill until firm.
