Ingredients

  • 12 medium size ears corn
  • 4 cups shelled fresh lima beans
  • 1 cup thinly sliced celery
  • 1 large onion, chopped
  • 1/2 cup chopped sweet red pepper
  • 1/2 cup chopped sweet green pepper
  • 1 1/2 cups sugar
  • 2 tablespoons mustard seed
  • 4 teaspoons salt
  • 3 cups white vinegar

Instructions

  1. Peel husks and silks from corn.
  2. Place ears in a kettle; pour in boiling water to cover.
  3. Heat to boiling again; cook for 5 minutes; then drain.
  4. Cool until easy to handle, then cut corn from cobs.
  5. Combine corn with remaining ingredients in the kettle.
  6. Heat, stirring several times, to boiling.
  7. Cook uncovered for 20 minutes.
  8. Ladle into hot sterilized jars; seal following manufacturer's directions.
  9. Cool jars, then label and date.
