Ingredients

  • 1/2 cup cocoa
  • 1 tablespoon unbleached flour
  • 1/4 cup dark brown sugar, packed
  • 4 cups milk
  • 3 whole cloves
  • 1 cinnamon stick, broken in half
  • 2 tablespoons powdered sugar
  • 1 1/2 teaspoons vanilla
  • whipped cream

Instructions

  1. Mix cocoa and flour in a 2-quart saucepan.
  2. Stir in brown sugar, milk, cloves, and half of the cinnamon stick.
  3. Heat just to boiling over medium heat, stirring constantly; reduce heat.
  4. Simmer uncovered for 5 minutes (do not boil).
  5. Remove from heat; discard cloves and cinnamon.
  6. Stir in powdered sugar and vanilla.
  7. Beat with molinillo, wire whisk, or hand beater until foamy.
  8. Pour into 4 cups or mugs.
  9. Serve with whipped cream and cinnamon sticks.
