Fig Bar Bread

Ingredients

  • 1 1/2 c. flour
  • 2/3 c. granulated sugar
  • 1 1/2 tsp. baking powder
  • 2 beaten eggs
  • 1/2 tsp. ground cinnamon
  • 6 to 7 fig bars, crumbled (about 1 c.)
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1/2 tsp. vanilla
  • 1/3 c. brown sugar

Instructions

  1. In a medium bowl, sift together flour, granulated sugar, baking powder and salt. Combine beaten eggs, milk, oil and vanilla. Add to flour mixture, stirring until well blended.
  2. In a small bowl, combine brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs.
  3. Mix in crumbled fig bar cookies. Pour 1/3 of the batter into a greased and floured 8 1/2 x 4 1/2 x 2 5/8-inch loaf pan.
  4. Sprinkle half of the fig mixture over the batter.
  5. Pour another 1/3 of the batter into the pan and sprinkle remaining crumbs over.
  6. Top with remaining batter.
  7. With narrow spatula, swirl gently through batter and crumbs to marble.
  8. Bake at 350° for 50 to 55 minutes.
  9. Let stand 5 minutes to cool and remove from pan.
