Ingredients

  • 3 cups figs, cut in quarters
  • 1/4 cup plus 2 tablespoons sugar
  • 2 tablespoons flour
  • 2 tablespoons melted butter
  • pinch of ginger
  • 1 teaspoon vanilla flavoring
  • 2 tablespoons lemon juice
  • 2 eggs, beaten

Instructions

  1. Place the quartered figs in the pie shell.
  2. Mix the sugar, flour, melted butter, ginger, vanilla flavoring, lemon juice, and beaten eggs together.
  3. Pour the mixture over the figs in the pie shell.
  4. Bake in a preheated oven at 450°F for 10 minutes.
  5. Reduce the oven temperature to 350°F and continue baking for 30 minutes.
