Filled Lemon Cookies combine tender cookie dough with a tangy lemon flavor and sweet raisin filling, perfect for a delightful treat suitable for gatherings or afternoon snacks.

Ingredients

  • 1/4 cup butter or margarine, softened
  • 1 (8 oz.) package cream cheese, softened
  • 1 egg
  • 1/4 teaspoon vanilla
  • 1 package lemon cake mix
  • Raisin Filling

Instructions

  1. In a small mixer bowl, beat butter and cream cheese until light and fluffy.
  2. Beat in egg, vanilla, and half the cake mix until smooth.
  3. Stir in the remaining cake mix.
  4. Cover and chill the dough for 30 minutes.
  5. Prepare the Raisin Filling; allow it to cool.
  6. Preheat oven to 375°F (190°C).
  7. Roll about 1/4 of the dough at a time to 1/8-inch thickness on a lightly floured cloth-covered board.
  8. Cut into 1 1/2-inch squares using a cutter.
  9. Place half of the squares on an ungreased baking sheet; spoon 1/2 teaspoon of filling onto each.
  10. Cut a 1/2-inch 'X' in the center of the remaining squares.
  11. Place the filled squares on top of the filled ones and press together to seal.
  12. Bake for 10 minutes or until edges are very light brown.
