Finnish Coffee Bread, or Nisu, is a fragrant, lightly sweetened bread infused with cardamom, perfect for breakfast or tea time, with a soft crumb and a glossy finish.

Ingredients

  • 1 pkg. yeast
  • 1/4 cup lukewarm water
  • 2 cups milk
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 teaspoon ground cardamom
  • 8 to 9 cups flour

Instructions

  1. Dissolve yeast in lukewarm water.
  2. Scald milk and add sugar, salt, and butter.
  3. Cool the mixture to lukewarm, similar temperature to yeast.
  4. Add yeast to the milk mixture.
  5. Add 4 cups of flour to make a sponge and beat thoroughly.
  6. Let the sponge rise for 1 1/2 to 2 hours.
  7. Add well-beaten eggs and ground cardamom.
  8. Add flour gradually until the dough is stiff enough to knead.
  9. Let the dough rise again until nearly double in size.
  10. Turn onto a floured board and knead for a few minutes.
  11. Divide and shape the dough into 4 braided loaves.
  12. Let the loaves rise to double size.
  13. Bake at 350°F (175°C) for 30 to 40 minutes.
  14. Remove from oven and brush with a syrup made from 1 tablespoon water and 2 tablespoons sugar.
  15. Sprinkle with coarse sugar before serving.
