Ingredients

  • 1 stick butter, softened
  • 3 oz. cream cheese, softened
  • 1 cup plain flour
  • 3/4 cup brown sugar
  • 3/4 cup chopped pecans
  • 1 tablespoon margarine
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • dash of salt

Instructions

  1. Mix 1 stick softened butter, cream cheese, and flour until well combined.
  2. Form the mixture into 24 one-inch balls and press them into miniature muffin pans to form pastry cups.
  3. In a separate bowl, mix remaining ingredients: brown sugar, chopped pecans, margarine, vanilla, beaten egg, and salt.
  4. Pour the pecan mixture into the pastry cups.
  5. Bake at 325°F (163°C) for 30 minutes.
  6. Cool in pans for 10 to 15 minutes.
  7. Turn out the cookies and cool on a towel.
  8. These cookies can be frozen for later storage.
