Ingredients

  • 1 lb. sole fillets
  • 1 large can crushed tomatoes
  • 2 tsp. crushed garlic
  • 1 tsp. dill
  • 1 Tbsp. lemon juice
  • 2 (10 oz.) packages spinach
  • 1/2 lb. small cleaned and cooked shrimp
  • 6 oz. mixture grated Romano and Parmesan

Instructions

  1. Defrost and squeeze the spinach of all water.
  2. Spread the spinach over the bottom of a 9 x 13-inch glass pan.
  3. Layer sole fillets on top of the spinach.
  4. In a large saucepan, thoroughly heat the crushed tomatoes, garlic, dill, and lemon juice just to boiling.
  5. Cook the tomato mixture for 15 minutes.
  6. Add the cooked small shrimp to the sauce.
  7. Pour the sauce over the fish layers.
  8. Sprinkle the grated Romano and Parmesan cheese over the top.
  9. Bake at 350°F for 30 minutes or until the fish is done.
