- Prepare the mashed potatoes according to package directions, reducing water by 1/4 cup.
- Stir in drained spinach, sour cream, and pepper, then turn into a 10 x 6 x 2-inch baking dish.
- Dip one side of each fish fillet in milk, then in crushed stuffing mix.
- Fold each fillet in half, coating the outside with stuffing mix.
- Place the coated fillets atop the potato mixture and drizzle with melted butter.
- Bake uncovered at 350°F until the fish flakes easily with a fork, about 30 to 35 minutes.
- Serve with lemon slices.
