A comforting fish and potato bake featuring tender fish fillets coated in stuffing, layered with creamy spinach mashed potatoes, perfect for family dinners or casual gatherings.

Ingredients

  • 1 pkg. instant mashed potatoes (4 servings)
  • 1 (10 oz.) pkg. frozen chopped spinach, cooked and drained
  • 1/2 cup sour cream
  • dash of pepper
  • 1 lb. fish fillets
  • 1/4 cup milk
  • 1/2 cup herb seasoned stuffing mix, crushed
  • 2 tbsp. butter, melted

Instructions

  1. Prepare the mashed potatoes according to package directions, reducing water by 1/4 cup.
  2. Stir in drained spinach, sour cream, and pepper, then turn into a 10 x 6 x 2-inch baking dish.
  3. Dip one side of each fish fillet in milk, then in crushed stuffing mix.
  4. Fold each fillet in half, coating the outside with stuffing mix.
  5. Place the coated fillets atop the potato mixture and drizzle with melted butter.
  6. Bake uncovered at 350°F until the fish flakes easily with a fork, about 30 to 35 minutes.
  7. Serve with lemon slices.
