Ingredients

  • 4 flounder fillets
  • 1/4 cup mushrooms, thinly sliced
  • 1/2 cup chopped red pepper
  • 1/4 cup sliced green onion
  • 1 garlic clove, finely chopped
  • 1 tablespoon finely chopped flat leaf Italian parsley
  • 1 tablespoon finely chopped basil

Instructions

  1. In the microwave, cook mushrooms, red pepper, and green onion until soft.
  2. Stir in garlic, parsley, and basil.
  3. Add salt and pepper to taste.
  4. Cut four 12-inch lengths of aluminum foil.
  5. Spray the foil with vegetable spray.
  6. Place a flounder fillet on each piece of foil.
  7. Divide the vegetable mixture evenly among the fillets, placing it on top.
  8. Fold the foil over to create a sealed package.
  9. Grill or bake until the fish is cooked through, about 15-20 minutes.
