Fish Fillets On Spinach

Ingredients

  • 1 1/2 lb. haddock, skinless
  • juice of 1 lemon
  • 1 lb. fresh spinach
  • 2 Tbsp. vegetable oil
  • 1 medium onion, chopped
  • 1 tsp. butter or margarine
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 tomatoes, peeled and sliced
  • 1/2 c. grated Mozzarella

Instructions

  1. Wash fish; pat dry.
  2. Sprinkle with lemon juice and let stand for 10 minutes.
  3. Wash spinach well.
  4. Chop coarsely.
  5. Heat oil in frypan.
  6. Add onion; saute until soft.
  7. Fry fish in pan with onions a few minutes on each side until golden brown.
  8. Remove fish and onions; reserve.
  9. Add spinach to frypan and stir-fry 4 to 5 minutes.
  10. Grease casserole dish with butter; add spinach.
  11. Arrange fish on spinach; sprinkle with salt and pepper.
  12. Place tomatoes on fish and sprinkle with cheese.
  13. Bake at 350° for 15 to 20 minutes. Great!
