Ingredients

  • 2 lb. lean beef stew meat, cubed
  • 5 large potatoes, chopped into chunks
  • 5 carrots, cut into 1-inch pieces
  • 4 large stalks celery, cut into 1-inch pieces
  • 1 onion, sliced
  • 1 medium green pepper
  • 2 (10 3/4 oz.) cans condensed golden mushroom soup
  • 2 1/2 Tbsp. tapioca or cornstarch
  • 1 to 2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. In a large Dutch oven, layer all ingredients except the tapioca, salt, and pepper.
  2. Combine the tapioca, salt, and pepper, then sprinkle over the layered ingredients.
  3. Cover and bake in a 250°F (121°C) oven for 5 hours.
