Ingredients

  • 3 lb. chicken, cut into 8 pieces
  • 1 cup mayonnaise
  • 11 oz. can Cheddar cheese soup
  • 4 oz. can or bottle mushroom slices or buttons
  • 1/2 cup white wine
  • 1 clove garlic, crushed
  • 1 tablespoon parsley flakes
  • 1 teaspoon curry powder
  • salt to taste
  • pepper to taste
  • paprika for garnish

Instructions

  1. Preheat oven to 350°F.
  2. Coat a 9 x 13-inch baking dish with nonstick vegetable spray.
  3. Arrange chicken pieces in the baking dish; set aside.
  4. Mix mayonnaise, Cheddar cheese soup, mushroom slices, white wine, crushed garlic, parsley flakes, curry powder, salt, and pepper in a large bowl.
  5. Pour the mixture over the chicken pieces.
  6. Bake for 60 to 75 minutes, until the chicken is cooked through and the sauce is bubbly.
  7. Sprinkle with paprika just before serving.
