  • cold water
  • pinch of salt
  • 5 to 6 oz. shortening and margarine, mixed

  3. Divide the softened fat into quarters and rub one portion into the flour and salt.
  4. Mix an elastic dough with about 1/4 pint of cold water, adding a squeeze of lemon juice.
  5. Place the dough on a floured board and roll out into an oblong, keeping the sides straight.
  6. Flake 1/4 of the fat into small pieces over two-thirds of the dough.
  7. Dredge the entire surface with flour and fold the bottom one-third up and the top one-third down.
  8. Turn the pastry to bring the folded edge to the right; repeat rolling, flaking, and folding twice more.
