- Prepare caramel by mixing 1/2 cup water and 1/2 cup sugar in a small saucepan.
- Cook on medium heat, rinsing the sides of the pan with water using a squirt bottle when sugar condenses on the sides.
- Continue cooking until the mixture turns an amber color, about 10 minutes, then immediately pour into the bottom of custard cups or a large round casserole dish.
- In a mixing bowl, whisk together 6 large eggs, 6 large egg yolks, 2 1/2 cups sugar, 2 teaspoons vanilla, 2 cups half and half, and the can of sweetened condensed milk.
- Pour the custard mixture over the caramel in the ramekins or dish.
- Place the ramekins or dish in a water bath and bake at 350°F (175°C) until set, about 45 minutes.
- Let cool, then refrigerate before serving.
