Ingredients

  • 6 large eggs
  • 6 large egg yolks
  • 2 1/2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups half and half
  • 1 can sweetened condensed milk

Instructions

  1. Prepare caramel by mixing 1/2 cup water and 1/2 cup sugar in a small saucepan.
  2. Cook on medium heat, rinsing the sides of the pan with water using a squirt bottle when sugar condenses on the sides.
  3. Continue cooking until the mixture turns an amber color, about 10 minutes, then immediately pour into the bottom of custard cups or a large round casserole dish.
  4. In a mixing bowl, whisk together 6 large eggs, 6 large egg yolks, 2 1/2 cups sugar, 2 teaspoons vanilla, 2 cups half and half, and the can of sweetened condensed milk.
  5. Pour the custard mixture over the caramel in the ramekins or dish.
  6. Place the ramekins or dish in a water bath and bake at 350°F (175°C) until set, about 45 minutes.
  7. Let cool, then refrigerate before serving.
