Flannel Cakes are fluffy, tender pancakes with a rich buttermilk flavor, perfect for a comforting breakfast or brunch enjoyed by family and friends alike.

Ingredients

  • 1 egg
  • 1 1/2 cups flour
  • 2 cups buttermilk
  • 1/2 teaspoon baking soda

Instructions

  1. In a medium bowl, beat the egg well.
  2. Add buttermilk and mix well.
  3. Dissolve the baking soda in about 1 tablespoon of lukewarm water.
  4. Add the dissolved baking soda to the batter and mix.
  5. Heat a griddle to 450°F and lightly oil or grease it.
  6. Drop 1/4 cup of batter onto the griddle for each pancake.
  7. Cook until bubbles form on the top and the bottom is evenly browned, then turn and brown the other side.
