- In a medium bowl, beat the egg well.
- Add buttermilk and mix well.
- Dissolve the baking soda in about 1 tablespoon of lukewarm water.
- Add the dissolved baking soda to the batter and mix.
- Heat a griddle to 450°F and lightly oil or grease it.
- Drop 1/4 cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the top and the bottom is evenly browned, then turn and brown the other side.
