Ingredients

  • 3 cups creamed cottage cheese
  • 1 cup pure maple syrup
  • 1 cup plain yogurt
  • 6 tablespoons fresh lime juice
  • 2 eggs
  • 2 envelopes plain gelatin
  • 1 cup whipped cream
  • graham cracker crumbs

Instructions

  1. Combine syrup, yogurt, eggs, and gelatin in the top of a double boiler.
  2. Stir constantly over medium heat until gelatin is dissolved.
  3. Blend cottage cheese with lime juice using a blender or rotary beater until smooth.
  4. Combine the cheese mixture with the gelatin mixture and blend well.
  5. Fold in the whipped cream.
  6. Pour into a greased springform pan that has been buttered and dusted with graham cracker crumbs.
  7. Chill until the cheesecake is set.
