Ingredients

  • 2 Tbsp. butter
  • 1/4 c. lemon juice
  • 1 Tbsp. lemon zest
  • 1 tsp. tarragon
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 small fillets
  • 1 tsp. Dijon mustard
  • 1/2 tsp. dry mustard

Instructions

  1. Preheat broiler.
  2. Line broiler pan with foil.
  3. Melt butter on stovetop.
  4. In a small bowl, combine melted butter, 2 tablespoons lemon juice, 1 teaspoon lemon zest, 1/2 teaspoon tarragon, salt and pepper.
  5. Place fish fillets on the prepared pan.
  6. Brush lemon-butter mixture on fish.
  7. Broil fish 4 inches from heat for about 7 minutes until fish is cooked.
  8. In a mixer bowl, combine remaining 2 tablespoons lemon juice, 2 teaspoons lemon zest, 1/2 teaspoon tarragon, Dijon mustard and dry mustard.
  9. Beat cream into the mixture in a thin stream and continue beating until soft peaks form.
  10. Serve fish topped with a dollop of the lemon cream.
