Ingredients

  • 6 eggs, separated
  • 1 Tbsp. flour
  • 1 Tbsp. cornstarch
  • 1 c. milk
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • dash of pepper

Instructions

  1. Beat egg yolks; add flour, cornstarch, salt, and pepper and beat until smooth.
  2. Add milk gradually, beating constantly.
  3. Beat egg whites until stiff, but not dry.
  4. Fold egg whites into the egg yolk mixture.
  5. Melt butter in a heavy 9-inch skillet.
  6. Pour in the egg mixture and bake in a moderate oven (350°F) for 20 minutes.
  7. Fold onto a hot platter and serve at once.
