- Combine crushed pineapple, maraschino cherry juice, lemon-flavored gelatin, and sugar in a mixing bowl.
- Stir until the gelatin and sugar are dissolved.
- Add chilled, undiluted Carnation evaporated milk and lemon juice to the mixture.
- Beat with a mixer until the mixture is fluffy and light.
- Fold in sliced maraschino cherries gently.
- Pour the filling into the baked pie shell.
- Refrigerate until set, about 2-3 hours before serving.
