Ingredients

  • 9-inch baked pie shell
  • 3/4 cup crushed pineapple
  • 1/4 cup maraschino cherry juice
  • 1 package lemon flavored gelatin
  • 1/2 cup sugar
  • 1 cup chilled, undiluted Carnation evaporated milk
  • 1 tablespoon lemon juice
  • 1/4 cup sliced maraschino cherries

Instructions

  1. Chill Carnation evaporated milk in an ice cube tray for 15 to 20 minutes until soft ice crystals form around the edge of the tray.
  2. Combine crushed pineapple, maraschino cherry juice, lemon-flavored gelatin, and sugar in a mixing bowl.
  3. Stir until the gelatin and sugar are dissolved.
  4. Add chilled, undiluted Carnation evaporated milk and lemon juice to the mixture.
  5. Beat with a mixer until the mixture is fluffy and light.
  6. Fold in sliced maraschino cherries gently.
  7. Pour the filling into the baked pie shell.
  8. Refrigerate until set, about 2-3 hours before serving.
