A light, fluffy lime salad combining pineapple, walnuts, marshmallows, and whipped cream, perfect for luncheons, potlucks, or as a sweet side dish with a citrus twist.

Ingredients

  • 8 oz. can crushed pineapple
  • 3 oz. pkg. lime gelatin
  • 3 Tbsp. water
  • 3 oz. pkg. cream cheese, softened
  • 1 c. chopped walnuts
  • 1 c. miniature marshmallows
  • 1 c. heavy whipping cream, whipped

Instructions

  1. Drain the crushed pineapple, reserving the juice and set aside.
  2. In a saucepan, combine lime gelatin, water, and the reserved pineapple juice.
  3. Cook and stir over low heat until the gelatin is dissolved.
  4. Refrigerate until the mixture is syrupy, about 30 minutes.
  5. In a mixing bowl, beat the softened cream cheese until smooth.
  6. Fold in the syrupy gelatin mixture, chopped walnuts, miniature marshmallows, and whipped cream.
  7. Mix gently until well combined.
  8. Refrigerate for at least 1 hour before serving to allow flavors to meld.
