Vegetable Bites
Crispy vegetable bites with golden exterior and tender interior, perfect as a healthy snack or appetizer for gatherings and family meals.

- Preheat oven to 450°F.
- Grease a 9 x 13-inch pan with 1 tablespoon of melted margarine.
- Beat the egg and water together in a small bowl.
- In a separate bowl, mix flour and salt.
- Dip 1/4 of the vegetables into the egg mixture, then remove one piece at a time and roll in the flour mixture.
- Place the coated vegetables into the greased pan.
- Repeat with the remaining vegetables.
- Pour the remaining melted margarine over the vegetables.
- Bake uncovered, turning once, until vegetables are crisp-tender and golden brown, about 10 to 12 minutes.
- Drain excess oil if necessary.
- Sprinkle with Parmesan cheese before serving.
