Ingredients

  • 1/3 cup margarine, melted
  • 1 egg
  • 2 teaspoons water
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 cups fresh cut-up vegetables (carrot slices, broccoli florets, cauliflowerets, zucchini slices, green or red pepper strips)

Instructions

  1. Preheat oven to 450°F.
  2. Grease a 9 x 13-inch pan with 1 tablespoon of melted margarine.
  3. Beat the egg and water together in a small bowl.
  4. In a separate bowl, mix flour and salt.
  5. Dip 1/4 of the vegetables into the egg mixture, then remove one piece at a time and roll in the flour mixture.
  6. Place the coated vegetables into the greased pan.
  7. Repeat with the remaining vegetables.
  8. Pour the remaining melted margarine over the vegetables.
  9. Bake uncovered, turning once, until vegetables are crisp-tender and golden brown, about 10 to 12 minutes.
  10. Drain excess oil if necessary.
  11. Sprinkle with Parmesan cheese before serving.
