  • 1/4 teaspoon thyme leaves
  • 1/4 teaspoon cracked black pepper

Instructions

  1. In a large bowl, combine yeast, 1 cup flour, and 1 teaspoon salt.
  2. In a 1-quart saucepan over medium heat, heat milk, 2 tablespoons olive oil, and 1/4 cup water until very warm (120° to 130°).
  3. With mixer at low speed, gradually beat milk mixture into dry ingredients just until blended.
  4. Increase speed to medium; beat 2 minutes, occasionally scraping bowl with rubber spatula.
  5. Beat in 1/2 cup flour to make a thick batter; continue beating 2 minutes, scraping bowl often.
  6. With a wooden spoon, stir in 1 cup flour to make a soft dough.
  7. Sprinkle work surface with remaining 1/2 cup flour, turn dough onto work surface and knead until smooth and elastic, about 8 minutes.
  8. Shape into a ball and place in a greased large bowl, turning dough to grease top.
  9. Cover; let rise in warm place until double, about 1 to 1 1/2 hours.
  10. Preheat oven to 400°F (200°C).
  11. Punch down dough and transfer to a greased baking sheet.
  12. Use fingertips to dimple the surface of the dough.
  13. Sprinkle with thinly sliced red onion, grated Parmesan cheese, thyme leaves, and cracked black pepper.
  14. Bake until golden brown, about 20-25 minutes.
