Foiled Orange Roughy

Ingredients

  • 2 orange roughy fillets, thawed
  • 1 large potato, peeled and sliced thin
  • 1 large carrot, peeled and sliced
  • 1/2 cup green beans
  • 6 slices onion
  • 1 tablespoon margarine
  • salt and pepper

Instructions

  1. Place each orange roughy fillet on a piece of aluminum foil.
  2. Cook the sliced potato in a microwave-safe dish, covered, on High for 3 to 5 minutes.
  3. Top each fillet with half of the cooked potatoes, sliced carrots, green beans, sliced onions, and a small amount of margarine.
  4. Add salt and pepper to taste.
  5. Fold the foil into a packet, covering all ingredients.
  6. Bake the foil packets at 400°F for 20 to 25 minutes.
  7. Test the fish with a fork to ensure it is cooked thoroughly.
