Ingredients

  • 3 lb. chuck pot roast
  • potatoes, sliced
  • onions, sliced
  • carrots, sliced

Instructions

  1. Sear both sides of the chuck pot roast over hot coals until browned.
  2. Place the seared roast in a large piece of heavy-duty foil.
  3. Add sliced potatoes, onions, carrots, and any other vegetables around the roast.
  4. Season the roast and vegetables as desired.
  5. Seal the foil completely by folding over the edges to create a double layer.
  6. Cook on hot coals for about 1 hour, turning occasionally for even cooking.
