- Beat egg whites until stiff peaks form.
- Gradually add sugar and continue beating until glossy and stiff.
- Add vanilla extract to the egg whites and mix gently.
- Place Ritz crackers in a blender and blend until crumbed.
- Blend walnuts in the same blender until finely chopped.
- Mix cracker crumbs and chopped walnuts together in a bowl.
- Gently fold the cracker and walnut mixture into the egg whites using a spoon.
- Grease and flour an oblong pan.
- Spread the mixture evenly in the prepared pan.
- Bake at 350°F (175°C) for 20 to 25 minutes.
- Allow to cool completely.
- Spread Cool Whip over the cooled dessert and add coconut or sprinkles as desired.
- Refrigerate until ready to serve.
