A vibrant French spinach salad featuring fresh greens, mushrooms, water chestnuts, boiled eggs, and crispy bacon, tossed in a flavorful dressing, perfect for light lunches or gatherings.

Ingredients

  • 1 pkg. fresh spinach
  • 4 or 5 green onions
  • 1 cup fresh mushrooms or 1 small can drained mushrooms
  • 1 can water chestnuts drained
  • 4 boiled eggs chopped
  • 8 slices bacon cooked and crumbled

Instructions

  1. Cook bacon until crispy, then crumble and set aside.
  2. Boil eggs, peel, and chop them.
  3. Prepare all fresh ingredients: wash spinach, slice green onions, slice mushrooms or drain canned mushrooms, drain water chestnuts.
  4. In a large bowl, combine spinach, green onions, mushrooms, water chestnuts, chopped eggs, and crumbled bacon.
  5. Just before serving, pour dressing over the salad and toss to combine.
